Summer Pie! Squash and Tomato

Yummy Squash and Tomato Summer Pie

With tomatoes and squash a plenty from my garden I decided to try a new dish. 

I hate to admit this, but my husband and I ate almost the entire dish!!! It was so yummy!!!!!


Ingredients:

Crust

1 cup almonds

1 cup oats

1/2 cup hemp seed hearts

1/2 cup flaxseed- covered in water and left to soak for 5 minutes

1/4 dried Italian herbs

Place all ingredients into a food processor. Spread crust into a pie pan and pre-bake for 8 minutes.

Pie Filling

1 block firm tofu - pressed in paper towels to get rid of extra water

4  - 5 Tablespoons nutritional yeast

3 - 4 Tablespoons miso

1 Tablespoon lemon juice

1 Tablespoon apple cider vinegar

Mix these ingredients together.

Thinly slice the following:

2 - 3 yellow summer squash

1 medium sweet onion

2 - 3 fresh tomatoes

HERBS

fresh basil, oregano, rosemary

Layer all ingredients. Bake at 350ยบ until toasted.
